Jam Cake

Ingredients

1 c. butter

1 T.Cocoa

2 c. brown sugar

1 t. cinnamon

3 eggs (separated)

1 t. cloves

1 c. raisins

2 t. baking powder

1 c. chopped pecans

2 c. buttermilk

1/4 c. chopped black walnuts 3 1/2 c. all-purpose flour

1 c. blackberry jam (or whatever you prefer)

Directions

Cream butter and sugar.
Beat egg yolks together, then beat into creamed mixture.
Combine raisins, nuts, and toss with a quarter c. of flour.
Sift remaining dry ingredients, except soda.
Dissolve soda in milk.
Blend dry ingredients and milk alternately with creamed mixture beginning and ending with dry ingredients.
Blend in jam.
Add raisins and nuts.
Beat egg whites until they are very stiff.
Fold them into batter.
Grease and line four (4) 9" layer cake pans.
Bake in preheated 250 degree oven for 25 minutes.
Remove from pans and cool on racks.

(Won Second Prize in Kentucky State Fair)

This was Mother's favorite cake. She frequently made it with strawberry jam. It tends to be dry and fall apart. It always brings back sweet memories.(Suzanne)
